Hur-raj For Indian Food

In Vancouver BC, we get treated to Indian food fit for a Raj at Vij’s. Signature savoury dishes include a Spiced Lamb Kebab with Mint-Mango Chutney and balsamic onions wrapped in a fresh Naan and a Seared Halibut Cheek in Coconut Masala Curry on Basmati rice. Next we head to Dania Beach, Florida where the SFT Bistro truck has turned boring sandwiches into a thing of beauty. Bestsellers include the Shorty with beef short rib in a housemade veal stock and Queso Fresco - and a Fontina Grilled Cheese with heirloom tomato, bacon and truffle fries. Then we stop the presses in New York City with the Bongo Bros where authentic Cuban cuisine is making the headlines with family recipes like their Mojo Sandwich with citrus-marinated chicken breast and spicy, garlic mayo. And lastly we’re at the Osaka Soul trailer in Austin, Texas that has imported the traditional Japanese savoury pancake known as Okonomiyaki and have given it a “pizza pie” makeover.
